When you eat sugar, your body triggers a process called GLYCATION. Glycation occurs when sugar in your bloodstream attaches to proteins, forming harmful molecules called advanced glycation end products. AGE's are the end result of a chain of chemical reactions involved in the initial glycation reaction, they are also known for their formation into Diabetes - but also occur in other disease processes.
